Best Brownies EVER

These things are so good. I originally made them for a Fourth of July party and I've been making them ever since!!!  I also found the perfect frosting recipe.  Awesome.

Martha Stewart Fudgy Chocolate Brownies

Nonstick cooking spray
6 ounces unsweetened best-quality chocolate, chopped
2 1/4 cups (4 1/2 sticks) unsalted butter, cut into pieces
1 1/2 cups all-purpose flour
1 1/2 (12-ounce) bags mini semisweet chocolate chips
6 large eggs, room temperature
3 cups sugar
1 1/2 tablespoons pure vanilla extract
1 1/2 teaspoons coarse salt

Directions

1.Preheat oven to 350 degrees. Spray a 13-by-18-by-1-inch baking pan with nonstick cooking spray and line with parchment paper; spray parchment with nonstick cooking spray and set aside.

2.Melt unsweetened chocolate and butter in a glass bowl in the microwave at 30 second intervals, stirring well after each - let cool. In a medium bowl, mix together flour and chocolate chips; set aside.

3.In the bowl of an electric mixer fitted with the whisk attachment, beat eggs, sugar, vanilla, and salt on high until ribbons form, 7 to 9 minutes. With the mixer on low, slowly add melted chocolate. Fold in flour mixture.

4.Pour batter into prepared pan, spreading evenly. Bake until a cake tester inserted into the center comes out clean, 25 to 28 minutes, rotating pan halfway through baking. Brownies may seem underbaked, but will continue to cook as they cool.

5.Transfer brownies to a wire rack to cool. Cut as desired.


Best Brownie Frosting EVER

6 tablespoons milk
6 tablespoons butter
1 1/2 cups white sugar
1 cup chocolate chips
1 dash vanilla extract

Combine the milk, butter, and sugar together in a saucepan and bring to a boil; allow to cook at a rolling boil for 30 seconds and immediately remove from heat. Add the chocolate chips and vanilla to the milk mixture and stir until the chips are completely melted. Pour immediately over warm brownies and smooth out quickly before it hardens up.

Banana Cookies with Caramel Frosting


1 cup butter
1 tsp vanilla
2 cups sugar
3 eggs
1.5 cups mashed bananas (or a bit extra)
4 cups flour
1/4 tsp baking soda
3 tsp baking powder
1/2 tsp salt
1 cup walnuts
1 cup mini chocolate chips
beat ingredients until blended. Bake at 400 degrees 8-10 minutes

Caramel Frosting
1/2 cup butter
1 cup brown sugar
1/4 cup milk
1/2 tsp salt
1/2 tsp vanilla
2 cups sifted confectioners sugar (you may not use all of this)
Melt butter, add brown sugar and cook over low heat for about 3 minutes. Stirring constantly. Add milk, salt, and vanilla. Stir until comes to a boil. Remove from heat and let cool slightly (2-3 minutes). Add confectioners sugar. Mix well. Frost cookies quickly before frosting hardens.

Spooooooooooooky weekend!

Big Halloween Party this weekend at the girls' school. It was super fun going room to room through the "haunted house" - until some kid pulled the carbon monoxide alarm and we had to flee the building in terror. Luckily - there was a hay ride! OUTIDE! Away from the alarm of doom!
The pink butterfly and bluebird had a fantastic time.
Costumes had to be SLIGHTLY modified from long sleeves to short due to the unseasonably warm weather.
SOME of the rooms in the "haunted house" were scarier than others....

Art Institute - here we come!

OK - I don't even know where to begin. I did NOT see this one coming from Nora. At all. I would have never in a million years pegged HER to be the artist, but here they are - her drawings from last night. With ZERO help from Mark and me.....she drew these 2 awesome faces. And these are just two examples. She did it all night! Amazing.

Right???? Crazy.

KC Zoo

Well, Saturday was supposed to be relatively cool, so we decided to go to the KC Zoo. Well, it ended up being hotter than we thought. But you can't tell from Iris' face as she enjoyed watching Nikita the Polar Bear swimming her laps.
Here are Nora, Iris, and their new girlfriend watching Nikita. If you look in the water to the right, you can see her diving. The girls loved watching her.

You can see the heat starting to take its toll. Red faces, but still having some fun.

FINALLY, the heat broke in Kansas City. We were able to get out and enjoy some beautiful sunshine at the park.
Iris was building some sandcastles and giggling on the swings.
